Last night we had a roast chicken dinner which we both thoroughly enjoyed.
Today we had chicken sandwiches for lunch, and this evening we've had jacket potatoes with home made coronation chicken topping (suggested by someone on AB and now our 'go to' leftover chicken meal).
If/when you roast a chicken, how do you have it?

Roughly though...maybe half a cup or so (probably ore)of mayo, a good heaped teaspoon of hot curry powder, a heaped dessert spoon of mango chutney, a handful or so of sultanas. I mix the mayo, mango chutney and curry powder in a bowl and keep tasting it till I like it, adding more of anything if I think it needs it, today I added more curry powder. Then throw in the sultanas and add it to enough chopped chicken to give us both a good helping on a jacket potato.
Same as Tilly. Sometimes intead of a roast I'll serve it on my tomatoes and peppers dish which is mentioned and pictured here: Fao Togo in The AnswerBank: ChatterBank
Othertimes I might marinate a whole chicken before roasting and serve with salad, toasted pittas and chipotle coleslaw.
Recipes are variable, Tilly, but the main principles are Curry powder, apricot jam or mango chutney and mayonnaise. I like to add creme fraiche to mine to make it creamier and richer.
