I have a leather belt. I don't think it's bad taste. I approve of using as much as possble from animals killed for food. Anything else is disrespectful, not to mention wasteful.

And antlers are shed, why not use them ?

Just 'animal by-products' really. Terms are usually specific to the use (like in the examples you have given).
