Peaches In A Marsala Sauce

Poached peaches are a simple, beautiful, low fat dessert, full of fresh juicy flavours. The sweet, tender, ripe peaches soak up the wonderful flavours from the wine. The colours look wonderful, the dark red and orange makes a very pretty dish.
Marsala is a delicious Italian fortified wine similar to port, normally served as a dessert wine, and is a popular ingredient in Italian cooking, from stews and mains to rich sauces and desserts. Marsala wine is a wonderful ingredient to have stocked up in your kitchen cupboard; there are so many recipes you can make with Marsala wine and most are rich and full of strong delicious flavours perfect for a dinner party or celebration.
Poached peaches are no exception, despite being low fat it is full of sweet rich flavours and is a very luxurious desert ideal for a romantic evening.
Ingredients
- 2 peaches
- 150ml sweet marsala
- Cinnamon stick
Method
- Cut a cross into the peach skin, at the bottom of the peach. Pour boiling water over the peaches then rinse and cool under cold water, finally remove the skins.
- Halve the peaches and remove the stones.
- In a small saucepan, pour in the marsala wine, add the cinnamon and peaches and simmer for 15 minutes.
- Remove from the heat, allow to cool and remove cinnamon. Chill for at least 1 hour.
- Serve cold.
