I am thinking of getting a nokia n80 because i would like a phone which is compatible with outlook (while still being a decent size etc)
Does anyone have any negative experiences of the phone that I should consider?

POP works by downloading all your messages to the client you're using (e.g. outlook), and you can then do what you like with them.
IMAP works by storing all the messages on a central server that belongs to whoever runs your IMAP service, as well as the folder layout you may have created. The client (e.g. outlook) then downloads the stuff on-the-fly. This is great if you have a decent internet connection, and especially good if you want to check your account from multiple locations (such as your phone as well).
The N80, as well as pretty much all the Synbian phones I believe, support IMAP.
