I think pumpjack may be based outside UK in Ireland but I'm not sure whether the property would be in the UK (pupjack asked about a mortgage in Northern Ireland on another post ).The second home issue may be complicated or irrelevant if one is in UK and one isn't.

2. The apartment will be in your daughter's name but you will be the main/sole resident?

I bought my adult daughter a house after receiving an inheritance. I asked the solicitor about transferring the money to them but was told I had to pay the money to my daughter first and she had to pay them from her account.
Does your daughter hold an account that can make such a payment? I also had to pay to confirm that the house was my daughter's alone and that I had no interest in it.
What happens if your daughter decides to sell it when she's 16, will you be ok with that?

you make a good point - if you fall out with your daughter at any point, it'll be a bummer as she'll have an asset you want
