Why have my sunflower seedlings grown very leggy?
Should I stake them to give them support until they are bigger?

I'm assuming you've grown them indoors in pots (?) where the warmth but low light makes them grow very fast. It's best to wait until April & plant them straight in the ground which makes for tougher plants. Are they the very tall ones? If so they will need support for the entire season.
(in my experience most sunflowers over about 2' 6" need some support as the flower heads become very heavy.
