This one`s tried and tested.. Chicken with Chilli and Basil
2tbsp veg oil, 450g chicken breasts cut into strips, 3tbsp chopped garlic, 3tbsp finely sliced shallots, 3 fresh red or green chillies, seeded and finely shredded, 2tbsp fish sauce, 2tsp dark soy sauce, 2tsp sugar, large handful of Thai or ordinary basil leaves.
Heat wok until very hot, add 1tbsp of the oil. When hot, add the chicken and stir fry over high heat for 8-10 mins until browned all over. Remove and set aside
Reheat wok with remaining oil. Toss in garlic and shallots and stir fry until golden grown. Return chicken to wok and add chillies, fish sauce, soy sauce and sugar. Stir fry for further 8-10 mins until chicken is vooked through. Stir in basil leaves. Serve with rice
