Contrary cat

My cat has been with us nearly 2 weeks now and is settling in very well, seeming to feel very at home.  My question concerns his toilet habits.  He uses his litter tray without fail for urinating and he uses it sometimes for the other!  But every now and then he decides not to use it and instead leaves us a present either in the bath or on the leather sofa?  Does anybody know why he might be doing this and what we can do to discourage him.  As I said he uses his tray sometimes so why not all the time?  We clean it out daily and I've also tried lemon juice on the sofa and biological washing powder but neither seems to discourage him.  Any ideas greatly appreciated. Thanks.
