When you see a cat outdoors and it comes to be stroked many keep walking round either in a circle or behind you and back rather than staying in one place. Is there a known reason they do this?

Yes, they are cunning little gits. They rub themselves against your legs, not as a sign of affection but to get rid of their fleas.
It doesn't realise that you are able to move your hand to the front of their body and stroke again. Naturally they 'smooth' a post or corner of the couch so they get a pleasant sensation and turn to do it again. When they rub with their cheek they deposit their scent.

Toms (and even some queens) will also spray urine to let others know it is their domain, and it stinks to high heaven.
