Sammi has been showing some signs of agression...mostly food guarding. Common in ex racers as they basically live in prison and isolation. They never share anything. He had been improving until about 2 weeks ago when he growled/snapped for seemingly no reason. This was with food, toys and 2x when I was just standing near him. Out of the blue he became quite agressive this morning...I was cornered by my front door...got nipped thru my jeans. Called behaviourist...it was to be arranged that he would be collected. After speaking to several representatives of the rescue, I was then told that with this being recurring behaviour that was getting worse...he would have to be put down. They, as a charity, would face legal action if they rehomed him. And maybe his fears would take over again. I feel so, so sad...but TBH I was becoming quite afraid of him.
I can't think of anything else I could do...and wonder why he was so extreme.

For more on marking an answer as the "Best Answer", please visit our FAQ.The rescue who homed him with you should collect him and do what is necessary - it is very unfair of them to expect you to do it. It is extremely unusual for Greyhounds to be like this even with food - we fed our racers two at a time in their kennels. It is likely he has something that is causing this so nothing you could do to avoid it.
No idea where you are but if I was near you I would come over and take him for you, because even though its never a nice thing to have to do when you work with rescue dogs you get to realise that sometimes it is the best thing for them as they are very rarely 100% in themselves when they react so strangely.
I presume the vets won't let you go in with him due to restrictions - but don't feel bad about that as although you have given him all your love these past few weeks they are very much used to having different carers - so say your goodbyes and let the vet do the necessary. Don't beat yourself up about it, just remember you have him the best home possible while he was with you
