Why do all animals have two eyes? Surely evolution would hav either made more or one big one in some species?

why do humans have two eyes?
A single eye would be a disadvantage as the animal would have little depth perception. Some animals with two eyes are able to scan a wide arc (birds & fishes) and some animals have more than two (spiders have eight).
As smiffy says, for stereoscopic vision, to enable them to see their prey and know how far away it is.

Grazing animals have one eye each side of their head so they can see the predators easier.

Humans would be even more dangerous driving a car with only one eye.
Clams have dozens of eyes. Some lizards, particularly the primitive ones, have a third vestigial eye on their forehead with which they can detect light and darkness - I have no idea why this is so. Many animals have no eyes at all but have extraordinary sensory organs.

I saw one of Toureman's 'drivers' come out of his car at the chippie last night, when it was dark. Perhaps this individual was sensitive to the blinding moonlight because he was wearing his sunglasses... and had tinted windows on his car to boot!
It is NOT evolution but creationism. It has been proven that it is impossible to produce a complete eye by evolution.
I suspect you really mean Mammals
So how come we have all evolved with eyes then - it can not be impossible as it has happened.
Who or what created them?
A God or superior being. This is more believeable than Darwinism in all its forms which is only a tool for coping with what already exists.
and who or what created this superior being - or did they evolve
If we look for clues I'm sure they are out there. For instance why does a chimp have in excess of 98% of human genes. Why does a mouse have over 95% of human genes.
I would suggest we did not progress from a mouse to have these extra 5% added to produce a human. My theory is that the genetic code was designed specifically for humans and 'the designer' modified this code by extracting certain genes to produce other species.
What might prove this theory if we found a species that contains the 100% genes of a human + an extra amount.
