Straight Dope says, "...most large primates such as gorillas and orangutans cannot swim, partly because their centers of gravity are in their necks and sternums..." Some speculate the sloth can't swim, but that may be due simply to their never being observed...
As a child I was always told that the only animal not able to swim was a pig becaus its legs are so short that it cuts its throat with its trotters. However, I have no idea whether or not this is true.
Most insects and spiders can't swim.

Also, I would assume most birds wouldn't be able to swim either (esp ostriches and the like).

Also, sponges can't swim.

Heaven forbit! I need to disagree with clanad for the first time. I remembered seeing a doco a few years back on sloths, and it showed one swimming across a river. It swam faster than that it could move on land or in the trees. confirmation at

Pigs can also swim very well.
Birds is a good one <bunny29. Most birds not designed for water would soon become waterlogged and die from cold.
Adult crabs and urchins can't actually swim either.

It seems that humans can't swim (naturally) either.
