Geese in flight - a skein.
Not that you asked, but on land they're a gaggle.
In addition to the more common skein they're also know as a wedge when flying, specifically, in a V formation.

Other collective noun terms for Geese are Team, Plump and of course flock.
Aha, I did not know about the wedge formation. Gaggle is when they are "at rest".
