what are some animals that can change back and forward fron black and white

Quickly - chameleons, cuttlefish, flounders etc. Vary between lots of colours, sometimes including very dark and very light. Even UK common frogs can change shade quite a bit. Slowly from a colour (not usually black) to white for the winter, then back: arctic hare, lemmings, stoat/ermine, ptarmigan, arctic fox etc.
