It depends on how big the chicken was... and what is left. Strip off what is left,heat thru with a tin of cream of chicken soup-pour over rice. Or mix with mash,lots of black pepper,grated carrot and spring onions..shape into cakes ,and fry lightly. Serve with a salad. Or mix with cooked rice,and spices and stuff veggies such as peppers or aubergines. A bit of grated parmesan on top,and bake in the oven.
