Help with an old favorite!

I read this book long ago and it is wonderful, but all I can remember is a summary of it (romance):
Back when it was a newer idea for a girl to be attending further schooling past grade school, a young woman attempts to be the first woman to graduate from a veterinary school. She is housed at a local woman's boarding where she is away form the general men of her school. The men generally try to make her experiance at the school rough except for one man who sticks up for her & is being housed at the same boarding house as her. One inccident leaves her leg badly bruised & the young man helps retrieve her homework.
I do remember the cover of the book showed the girl sitting under a tree with, I believe, a horse in the background.
