He won't eat any vegetables at all? not even potatoes?
If you are worried a general multivitamin tablet with iron would do the trick, but it is much better if he gets the nutrients from fresh fruit and veg.
a multivitim will do the job.

or take a tip from mums with fussy kids and hide the veg within the food.
At the risk of sounding mean or getting told off....

Why's it your responsibility to make sure he's eating properly? He's a grown man for heavens sake.
I think a grown man will spot a sprout hidden under a lamb chop.
lol, Mcmouse.
fruit juice...orange and carrot is nice, tomato sauce and tomato puree will help with vits and other heallthy stuff...and fruit will cover the rest.... apart from that he's a grown up let him make his own decisions
Centrum multi vitamins are good. I wouldn`t take one every day though because they have 100% of daily requirements of vitamins and minerals so when someone is eating food as well they could be overdosing on some things. I don`t eat a lot of veg so I take a tablet every 2 or 3 days. I make vegetable soups and have one every day so that I get the nutrients that way when I can. Pasta sauces that have something veggy added to the sauce are a good way of getting veg without eating it whole

Thanks for all your answers..I know he is a grown man,,but don`t want him dying of lack of veg..I do hide things in his food.. I wish he ate pasta or rice, but northern man, all chips or mash,,just trying to make it easier on me by popping a pill down him..he he.
I will eat veg`s if they are all mixed up together and then mashed, what we call a fry-up, with a couple of sausages to help it taste better, and a fried egg slapped on top.
Veg help the digestive system as well! Does he eat fruit?
I wouldn't worry too much about OD'ing on vitamins.....you need to take an awful lot in order to get too much. Also-veg loose vitamins from the moment they are picked-so unless you have just picked them-or they are quickly frozen-you are not always getting all the nutrients you could.
