When I am in an unhappy mood I always itch or just stroek my nose, I don't normally realise, but people have pointed it out. What does this mean physchologically?

Hi rachy - From what I have read, you're trying to disguise your emotions. Bit like covering your face with a mask. The action of stroking your nose masks negative emotions by detracting from facial expression. Love the study of body language!

My friend touches her scalp and moves her fingers as if examining it for bumps when she gets stressed. Although I have never pointed it out!
rachygal were you a thumb sucker? Perhaps the hand - position evokes comforting memories.
It's probably sub-concious reassurance.

As children, we were all comfoted by touch, and parents usually stroke babies to make them feel secure and safe.

This feeling can be transferred subconciously into adulthood - the stroking sensation plus the feelng of touch is probably comforting for you - it's certainly nothing to worry about. Lots of people have similar unconcious gestures that they perform under stress, it's what makes us human. Don't stress yourself over it.
