In the case of a vasectomy, the sperm-count in the semen is minimised, but do the testes continue to produce sperm, and in that case what happens to it? -How is it discharged, etc?

The testes do continue to produce sperm. When the sperm cells die, they are reabsorbed by the body. This happens to all unused sperm cells whether you have had a vasectomy or not.
