Ingredients
1 small celeriac, approx 450g peeled weight
450 g carrots, peeled
180 g Philadelphia Extra Light
Juice of 1 lemon
Freshly ground black pepper
25 g walnuts, chopped roughly
Instructions
Using a food processor, grate the celeriac and carrots finely and place into a large bowl (alternatively do this with a hand grater).
Mix the Philadelphia with the lemon juice and black pepper, add to the grated vegetables and mix well together. Serve scattered with walnuts.
Philly's tips
This is a much lighter coleslaw using celeriac, if you cannot find it use finely sliced celery instead. It will keep covered in the refrigerator for 2-3 days. Ideal for parties
I thought about making this for tomorrows tasting session as Im trying to use up 2 tubs of light Philedelphia from Xmas.
