Won't weigh til next week after a proper spell of being back to normal. made butter oatmeal cookies for the coffee morning tasted a tiny corner to check, then at the end to or one of the ladies take the rest to Her husband. didn't want one myself but I do miss baking for someone else. Might make some bran muffins for next week, at least they are fat free with no sweetening but the dried prunes.
Soak a cup of All bran in just enough skimmed milk to make it squishy
Add half a cup of wholemeal flour with a teaspoon of baking powder and two medium eggs, half a cup of chopped prunes pre soaked ,or any other dried fruit add rum or brandy to the presoak liquid the fruit absorbs it nicely if you like a bit of luxury. Blend all ingredients in a bowl with a teaspoon of mixed cakespice, or half a teaspoon of ginger or cinnamon, spoon into muffin cases and bake at 180 degrees for 15 to 20 minutes until they spring back when pressed in the centre. They don't pickup like proper muffins but they do have a cakey texture and two are a good breakfast on the go .

Good Morning to all who follow I hope you have had a good week .I have stayed the same .Got no sweets or cakes left gave most away . I had to buy them in over xmas for my grandkids and big kids lol .Have stocked on soups for lunch this week mostly with the cold weather as it is difficult to plan meals with the weather so cold . But we know it can be done .
