Has he got a proper contract of employment with you? If he has (and he should have) then there must be something in there about conduct and responsibilities. Sounds like a disciplinary is on the cards. If you are doubtful about him, why has he got keys?
I really sympathise with you... Not an easy situation to be in, but I'm afraid you do have to let him go.... I know you're trying to find the words to say it, rather than ask advice about what to do... I'd just calmy sit down and show him the evidence... You do have to treat him like any other employee... He is taking a liberty, and also putting you in a very tricky position for a reference in the future.. Good luck!
You need to be able to explain the shrinkage come your annual audit, how will you do that unless you make situations like this a matter of record? You should alter his working pattern and not let him be alone in the bar or have a key, that can be done simply by 're-structuring' and revisting your staffing profile.
