my wife and i have a joint mortgage i have found out she has not onlt changed the mortgage bank but also with out me signing any thing she has changed it as well can she do this with out me signing any paper work ?/

Simple answer is no. If it's joint, it means joint and you both have to agree - and sign - any changes. Watch her because if she did that, she might try to sell behind your back too!

If she has done this she appears to have committed fraud (a criminal offence) by forging your signature, because both your signatures would have to be on the documents.
