I am currently undergoing the purchase of an apartment and am at a late stage in the process. If the seller was to change his mind, is there any way to claim compensation for solicitor/valuation fees already laid out ??

Not if he changes his mind before exchange of contracts - unless you have a specific agreement on the subject.
