I'm applying for a student current account with Halifax, when it asks for my occupation do I enter my current occupation or my occupation when I'm actually going to be using the account (ie. student)

If you're applying for a student account, it obviously helps if you're a student ;-)
So you need to ensure that the bank knows about it. Equally, it's always best to me completely honest when filling in any form. So the answer has to be state both occupations. e.g:
"Student (as from 18/09/08) - Currently store checkout operator"
