Before May when the other 10 countries joined the EU, I think the three without the Euro were the UK, Sweden and Denmark. Since the others joined though, assuming they wouldn't have the Euro, there would be those as well now.
UK, Sweden & Denmark are still without the Euro. None of the 10 new EU Member States - Cyprus, Czech Republic, Estonia, Hungary, Latvia, Lithuania, Malta, Poland, Slovakia & Slovenia - have a date yet for when they will change to the Euro (but they all intend to)
