Hey don't knock potato hash fried with an egg, it's lovely!

When I make it, i make a MASSIVE pan of it, as it freezes well, and great for taking to work for lunch etc.

So ,my ingredients are usually (nmow bearing in mind, i do freeze alot of it!) A whole bag of spuds, Two onions, two tins of corned beef, 4 oxo cubes and plenty of salt and pepper.

I cube the potatoes up quite small, and boil them until they're soft. Add the onions, corned beef and oxo cubes, turn it down and simmer for a good hour or so. Then I drain some of the liquid off (if still alot in it) and half mash. I quite like it lumpyish. and serve with loads of bread and butter. And picked beetroot or cabbage.
That sounds a lot like the corned beef hash I grew up with-and still make. Though I let it get crispy bits as I keep turning it-it doesn't 'boil'.
We always had it with fried egg-which I though was an American thing. I never do-as I hare fried eggs. But beetroot is yummmmmy.
we make an onion gravy, fry off onions til soft then gravy is just oxos and water.

boil some spuds, mash them with the corned beef. Then add the onions and a bit of gravy. Top with pastry. One pie is cooked dish up with lots of the onion gravy over the top.

yum yum
