If he's got a birthday coming up, you could try the same thing but call it something different. If not, make it up. Tell him that January 10th, for example, is Magic Sheet Swop day and then buy him something he really wants. After you've done the swop, don't give him the sheet back - say the Sheet Fairy has taken it and you don't know her phone number! If he still won't accept it, say if he wraps up one of his favourite toys, the fairy might leave him a new sheet and see what he does.
If all that fails, you might have to accept that he needs his sheet for security for a bit longer.
