If I were to take Paternity Leave over the Christmas period do I get 2 weeks entitlement (e.g. 21st Dec to 1st Jan) regardless of Boxing Day and New Years Day, or would it be extended due to the Bank Holidays?

It is extended for bank holidays. The same is true of maternity leave, although not many companies will make this well known.
I think it depends on your work contract and how your holiday entitlement is worked out. Contrary to popular belief there is no automatic entitlement to bank holidays off work and they can be counted as part of your leave entitlement or you can be expected to work them. So whether it is counted in your paternity/maternity leave or not will depend on your contract.
unless you are having a planned c-sec it might not work like that, but the paternity is for two weeks excluding statutory bank holidays. one thing many people have to bear in mind these days though is that if your company only pays stat paternity pay, what the impact that earning £120 per week for those two weeks might have on your oveall finances. i came a cropper the first time and took personal holiday the second.
