Simply, to match the delicacy of the Champagne in the glass.

in wine tasting they say that a thin glass makes the wine taste better. since reading this i have found it to be true, althought equally it could be my imagination! a bit like tea from a china cup, rather than a mug.
Don't know about easy to break but champagne glasses are tall and thin because this shape keeps the champers bubbly for longer than short wide shape.
