how do you get the cream to settle and not just mix in with the coffee? Its driving me to distraction!

already did that, it still didnt float.
Okay...after yrs of trial and error....Lightly whip the cream to make it slightly thicker, make sure you add sugar to the coffee, stir the coffee vigorously, and while its still moving round, SLOWLY pour the cream in over the back of a spoon (it might help if the spoon touches the side of the glass) Serve ASAP. It does work but you may have a few disasters until you perfect the technique. Good luck. xxx
Also - do not use single cream. You need a cream with a higher fat content. I used to make this mistake. Use the back of a spoon and double cream and you should have success. Enjoy!!
