Anyone own/use this oven??

I would like a manual or some guidelines on operating temperatures. I am running a small beachside takeaway bar which has the oven installed. Previous people did not use it and nobody has knowledge of it. I would love to do pizzas but not sure what temperature to use. A guide on timings would be good too. I've emailed the company but the reply said they don't sell them any more and have no manuals available. Clearly not the support that a huge company such as Braun, Tefal or similar would offer.

why not have a friendly chat with a (not too local) pizza shop. If you are not going to be in direct competition they might be helpful and give you some tips on temps and timings.
