Wedding cake

Can anyone advise.....I have to make a sponge wedding cake for next weekend, is it too early to make it this weekend, with it being sponge? I am covering it in regal ice but just dont want them cutting into it next week and it being green!!!!! It's a fairly simple cake, not much decoration, so should I just make it during the week......

Yep to early, as close to the day as possible, damp the sponge with a little stock syrup before covering so it stays moist.
not too much or it will spiol the icing
I agree with chris. If it was a rich fruit cake you could do it, but sponge cake does not keep well and would be stale by that time.

I beg to differ. If you make a rich madeira cake it will keep for a week easily. Or just add a tablespoon of extra flour to a normal sponge mix. You can either freeze it and then defrost a couple of days before. Or ice it and make sure you seal the edges with icing between the icing and the board. It is also best to use a drum board rather than one of the thin ones as they flex and you lose the seal. I found this out the hard way....blue cake. I have had success with freezing, it also makes the cake a bit more rigid for icing. Incidentally, I use a thin layer of butter icing to stick the regal ice on with. Good luck.
