What to do for the main!

Having dinner party for 4 inc me on Sat night. Have already decided what I am doing for the starter and the pudding. Need ideas on the main! It mustn't break the bank as I'm short on cash, and it needs to be fish/chicken/turkey or something veggie. (no bacony bits added onto chicken things etc)

I can do some tricky things but wouldn't attempt something like a soufle without practice runs!!!

So Starter is Lorraine Pascale's Doris Grant Loaf (see you tube link) accompanied by melted camembert and caramelised garlic bulbs (how she did it on Baking Made Easy) and
Pudding is going to be a variation on an Eton Mess (slightly melted ice cream instead of cream/yogurt) I've already got in the merangues!

I swear by Nigella's. It's lovely and comforting. I omit the eggs, and I use a mixture of fish (cod, haddock,salmon and prawns) but you go with your budget. You can omit the cheese from the mash and just make a lovely buttery mash with flat leaf parsley chopped through it for a bit of colour. I always make 2 and freeze one. They freeze really...

Fish Pie
Salmon en croute
Prawn laksa
Chicken with chorizo
Chicken in mushroom sauce
Marmalade/Lemon chicken
Chicken and veg curry/ Thai chicken curry
If you fancy carving, roast chicken? I call it my summer roast - chicken coated in cajun spices with half a lemon and a couple of sprigs of thyme inside and whole bulbs of garlic around it. Served with roasted mediterranean vegetables and crushed baby potatos.

Hi Vodkancoke, funnily enough I was thinking maybe fish pie. Now I have got one or two recipes for fish pie. Have you got a fave? or one you'd highly recommend? can you share recipe/online recipe or url or you tube?

I also meant to say, I just add the peas to the pie frozen as they cook in the oven. I also fry some leeks and add that to the pie but you can add any veg you like.
