Spinach tortellini with a ricotta sauce....

How do I make a ricotta sauce? Are there any other tips re the above? I had it for the 1st time last week, couldnt get over how delish it was. I can't remember what the sauce was, but it was creamy and it had peppers in it?

Vodkancoke: Yeah, whatever works!
Lol well in Italy we make it with a sauce called crema, it's just cream with a bit of stock through it. You can have any sauce you like with it really, it goes with everything. Another way to serve it is with melted butter, parmesan, basil and pine nuts.

Oh wow Vodkancoke - are you italian? or living there? I wish I was, I love all italian food! Thanks for the tips & if there's any more keep them coming!
My family are Italian and I have trained as a chef....best of both worlds! lol

Awesome - I'd love to train properly in cooking, I love it - but I love cooking italian especially, you can't go wrong with it & it's great whatever the occasion. I'll have to remember your name & pick your brains from time to time if that's ok - I'd love to get tips from a chef, it's not the same from a cook book :-)
Of course you can, any time you like. I'm sure there are others more qualified than me, but I'm always happy to share recipes! xx
