on come dine with me in bristol (an episode repeated a couple of weeks ago), one of the contestants made a starter of tagliatelle with minced chicken and streaky bacon, with a sauce made from a beef stock and cream reduction. They went mad for it, even the fussy eaters and said it was really delicious. Unfortunately, the recipe is not on the website, and when I found the episode on 4OD, it only whizzed through it.
Does anyone have any idea of the quantities, and how long you reduce the veloute type sauce?
