I live in Italy and am a chef, as well having just finished writing a gastronomic dictionary in 5 languages (90,000 words), so in my view for a proper and genuine Italian Tiramisu and not an infuriatingly non Italian version!) Use ladies fingers (not pavesini biscuits) strong espresso coffee, Mascarpone, sugar and eggs (5 egg yolks and only 3 well beaten egg whites) Beat the sugar with the egg yolks until a really light creamy colour, fold in the mascarpone gently then add the 3 well beaten egg whites. This makes the perfect filling. Dip the ladies fingers in the strong espresso coffee (no need to add alcohol to coffee in my view, as you want to taste the coffee and creamy mascarpone filling). Squeeze out the excess coffee well from the ladies fingers and place a layer of them on the bottom of a dish then add half the mascarpone mixture again cover with the remainder coffee soaked ladies fingers and finish with the remainder mascarpone mixture. Cover and put in the fridge until very cold (best overnight). When ready to serve, sieve over dark cocoa powder for preference or lots of chocolate shavings (I prefer cocoa powder) Remember that if you put on the cocoa powder before putting in the fridge, the cocoa will go soggy, so only at the last minute.
