Chicken Scallopine:
4 skinless chicken breasts
1 lemon, juiced
Seasoned breadcrumbs
Place each chicken breast between 2 sheets of clingfilm or greaseproof paper. Using a mallet or a rolling pin, batter them until slightly flattened but not pulverised!
Dip the chicken in the lemon juice, then dip in the breadcrumbs.
Heat some oil in a frying pan and fry chicken over a medium heat for around 3-5 mins on each side.
Serve with green salad.
Steak Pizzaiola
4 steaks of your choice
2 balls fresh mozzarella
Sauce:
2 400g cans peeled plum tomatoes
Olive oil
1 onion, finely chopped
1 clove garlic crushed
Salt and pepper
Fresh basil
Begin by making the sauce. Gently fry the onion in the oil for about 8 mins. Once they become slightly translucent, add the garlic. Cook for a further 2-3 mins. Add the can of tomatoes and squish them down as you stir them. Let this come to a gentle boil and leave to simmer for around 45 mins. (We use this as our pasta sauce so any unused can be frozen and used again) Season and at the last minute, throw in the basil leaves.
Fry the steaks to your liking, place a thin layer of the sauce over them, add a bit of the mozzarella cheese and finish in the oven until the cheese is melty.
