He used a spice called "Stinkfinger" which was from india and was used to take the place of both onions and garlic.

Asafoetida is also called Devil's dung but used in food does give it a good flavor-although you only need a pinch of this noxious-smelling stuff. Check out the link!

funnily enough I bought some today as my stocks are running low. I've never used it instead of onions or garlic but used it as well. you only need to use a pinch or half a teaspoon of it in certain dishes and as already mentioned it does give you 'gas' as it helps your digestive system. It is usually added when the oil is heated up so that it sizzles but doesn't burn and then you would add the onions and carry on as normal.
