Soggy marzipan
6 Answers
I covered my Christmas cake in marzipan last week. I usually leave it to dry out a little before icing, but this year instead of drying, the marzipan got wetter! Yesterday I had to scrape it off...it was a horrid sloppy mess. Am a bit wary of trying again. Any ideas what happened anybody? Room too warm...too cold....too humid?
Thanks.
Thanks.

It may be worth leaving the cake in a warm room unwrapped for a couple of hours before marzipanning. What did you use to stick it on? I find apricot jam or marmalade are best. It may seem like a stupid question but what did you cover the cake with after marzipanning? I find a clean tea towel works best. Good luck with the next try!!
