85 minutes
70 minutes and let it rest for 20 mins under a sheet of alu foil and a tea towel over it......

I never cook it for the +25. Let it rest under foil like DT says.

I've always found if you follow the cooking instruction on meat it's always over cooked...
85 mins is the maths but it could be a little too well done.....
I'm no cook, but I think I'll go along with DT and Ummm, here

i have followed the instructions on the pack,rubbed it with salt which i have to leave for half an hour.after cooking rest for 15-20 mins.its the time in the oven thats confusing me
I agree ummmm Why is that? I never cook meat as long as it says - the Christmas turkey is a prime example, its really hit and miss, once you have found the "formula" for your own oven I just stick to that. When I tried cooking according to instructions it was almost incinerated!

i like my meat very well done so should i still stick to package instructions.
The instructions are a guide. If they said any less and someone got food poisoning....

fan oven 200 c.
85 mins for dry pork it is then :-)

cook 25 mins 220 c
turn oven down to 180 for the rest of the cooking,if crackling is still a bit soft turn temp. back up to 220 for final 15 mins.
yep - 85 mins for the stuff that sticks on the tongue, 75 mins plus the 20 to 30 mins resting under the towel and foil for nice succulent, moist pork.

oooo - yummy crackling - you have made my mouth water, just off to look in freezer to see if I have one to cook for the weekend!

pork update,it smells yummy,going to turn it up in 10 mins to get a nice crackling
1200kg.? That's one hell of a big pig! About 5 days should do it, over a spit.
