A quick question about marinades before i go out

Yesterday i briefly caught something for the weekend and they were using amongst other things milk and lemon juice as a marinade as the milks lactose (I think) breaks down the meat resulting in a more tender meat.
Does the lemon juice not curdle the milk?
How good is milk as a marinade as you can't leave it that long at room temperature can you?
Yogurt is dairy and contains the same things as milk, which is better milk or yogurt, i'd guess milk as it's more fluid and get into every nook and cranny though i could be wrong.
