we had fajitas last night made from left over pot roast
Cottage pie with lots of onion, tomato puree, carrot, touch of cinnamon, beef stock and a topping of mashed potato and parsnip.

Sandwiches.
Put it in pitta bread with salad and horseradish mayo

I detest twice cooked meat. Sandwiches - or cold with whatever you like with it.
Cut into fine strips, add to black bean sauce (either from jars or better from foil sachets), which has been added to fried onions and green pepper. Add the beef at the very last moment, just to heat it. Serve with rice and enjoy!

Of course you could use any other Oriental sauce, but remember not to cook the meat or it will be tough.
It depends how much there is. If there's enough for another meal, I'll freeze it in gravy.
Depending on how much there is...

If there's a decent amount, i'll slice it up and reheat it the day after in the oven with onion gravy with chips.

If there's not so much, i'll add it to a stew in the slow cooker.
Eat it the next day :)

We have about 2/3's left over! The joints always look so small in their pakages :-)
defo then, freeze it for another day
Freeze half of what's left as Boxy suggested for another time then?
I do recommend the slices in gravy in th'oven though, put lotsa sliced onions in there and mushrooms, it's delicious.
Nice one mightymouse! We love it. You can also marinade the beef to make it even tastier.
