Why are Ryvita smooth (ish) on one side and holey on the other side?

And which side do you put your topping on?

i put my spread on the holey side. For some reason i think I get more spread as the holes get 'filled up' with the spread! no idea why one side is smooth and one holey - maybe so the topping 'sticks' better!?

one side is a diet side, 1 side a fuller fat side......

The butter / topping falls into the holes, whereas on the smooth side the butter / topping can be spread more thinly.

( I don't know either)

Thank you for taking the time to contact us. The familiar Ryvita dimples are made by a pair of spiked 'dockering' rollers. The purpose is two-fold: the extra surface area is critical for the exact crisp-bake texture and flavour, while the process helps 'pin' the top and bottom surfaces to avoid splitting.  And of course they look good! The other side is smooth as it is processed on a flat surface.

Yes , I did write to them, and got a reply within 20 minutes..... I was too curious myself, and just had to know...

Peanut butter for me

I use to live near the Ryvita factory up by the albion pub in poole dorset and the smell is overpowering but my god they taste good with a nice slice of quikes cheese!

Nasty horrid things like eating cardboard a good alternative take two slices of bread a frying pan fry in oil cover with fried mushrooms and bacon eat and enjoy!

All this would be a good marketing tool  (except for wellhungjock's "nasty horrid..." etc.).  I do get times when I really enjoy Ryvita, the darker ones, or with sesame seeds.  The holey side is a MUST for me, especially when I spread the chutney.  One thing is not to try to get too much on a slice when I've come from the pub. as the whole lot can easily end up on the floor, definitely wrong side up.  In ye olde pen and paper days manufacturers sometimes sent back a voucher for their product when you wrote in.
well i use the holey side or the flat side depending as to wether i am on a diet if i am i use the skimpy side if i am eating  normaly i load up the holey side. well at least thats what i though it was like that for to give peeps the choice
It's all to do with aerodynamics. If you spread on the smooth side and drop it, the holey side causes turbulence ensuring your ryvita will land spread side to the floor - aargh! If you spread the holey side, which is so to help with adhesion of your topping, and drop it, your ryvita will glide to the floor spread side up as the air passes smoothly underneath. 
i think Morello's answer is far more interesting than mine, and makes far more sense.
