Chicken risotto maybe??

What do you fancy doing with the chicken?
My way of inspiring you with chicken, tinks, would probably earn me an AB ban.

What generic ways do you like you chicken - roast, casseroles, broken up for risottos, etc......
Spicy wraps.
Oven baked in breadcrumbs (like a KFC)
I hope you havent opened two tins of sweetcorn or this thread could run and run!

I like wraps i like spicy i just dunno what i fancy!!!
'Cheat's Paella'

Fry the chicken with some garlic, thyme and chopped tomatoes, boil rice with chicken stock instead of water, and then combine the two together.

Helps if you have some jumbo prawns to chuck in towards the end too.

It's called 'cheat's paella' because it's nothing like a real paella, but it's still nice.

Never made risotto! Dont think i have risotto rice though! :0(

chicken is very versatile - i had some leftover chicken fried up with onions, left over bolied potatoes and some ham hock with a bit of seasoning and a dash of soy sauce for my tea last night - it was fab but you can tell it was a use up leftovers night :o)

it will cook very quickly - really depends on how you want to cook it - tbh - something like thighs is better for a cook in sauce type thing - I'd be tempted to do a stir fry or a rice dish with diced breast
annie0000's sounds pretty awesome too...everyone should have a bottle of soy sauce in their cupboard - it's makes everything awesome (except ice cream).

Re: risotto - you will need risotto rice, and making it is a bit long winded. You put the rice in a pan with some butter, then gradually add stock a ladle at a time.

The rice needs to absorb the stock before you add more.

A risotto is a GREAT meal, but you can't just leave it to cook - you'll be standing over the stove for 25 minutes.
Do not bung in the over, they'll be too dry. Gently sweat down a sliced onion, add the chicken and cook. Then serve with whatever you fancy.

What time are we expected? :-) I'll bring a bottle of plonk.
