Full course banquet ideas

Does anyone know of a good book which would help me and my friend plan a banquet for 20 odd people later this year? It will be several courses (6 or 7) - there are bits and pieces on the www but we really want "The Idiot's Guide to Planning a Banquet"! We're not sure on the order of courses (we've a rough idea) and whether there are any real "do nots". Eg, we don't know what would be appropriate for a small fish course, or whether we do a consomme course etc.

The "Good Food Guide" produced at least 2 "Dinner Party Books" with a lot of full menus for full dinner parties, and you could easily multiply up to get courses for 20 people. There are explanations and suggestions for wines, and timings for which course goes in the oven first ( for example).
