I love fish, which is nice and light in the warm weather. I had a nice surf and turf the other day. Small rack of lamb and scallops, salad and sauteed potatoes, with a balsamic glaze. It was delish.
I have salad with everything. Where most people would have potatoes and other veg I just swap in various salad items. Tonight we are having roast chicken fillet in a garlic and herb sauce with mixed lettuce, grated raw carrot, raw red onions and a couple of cherry tomatoes.
Bring out the barbecue - tuna steaks marinaded in olive oil, French mustard, honey, soy sauce and lemon juice; chicken marimaded in lime juice, chilli, garlic and olive oil; halloumi and mixed veg kebabs; an enormous salad; and fresh fruit and ice cream for afters. Mmmmm. A shame I'm at work today.
Tonight we have chicken thighs in a balti sauce Redman will have rice and salad I will have just salad not sure if there will be a dessert yet but there is ice cream in freezer and blackberries in the fridge
I've ordered a crate full of healthy salad ingredients from Waitrose for tomorrow.............so that'll be in the green bin by Monday and I'll be down the chippy.
