recently bought the ultimate ice cream book by Bruce Weinstein
in some of the recipies it uses cups of half and half ,can some kind person explain what half and half is please ?

It's an American product...equal parts milk and cream.

american cream - very light, often cream mixed with milk.

Not single cream...use double.
