Easiest Victoria Sandwich recipe ever!

200g caster sugar
200g soft butter
4 eggs,beaten
200g SR flour
1 tsp baking powder
2 tbsp milk
Preheat oven to 190 degrees
Put all ingredients into a bowl all at once and beat to a smooth mixture. Divide between 2 sandwich tins and cook for 20 mins or until golden.
For the filling mix together 100g soft butter,140g icing sugar and couple drops of vanilla essence. Spread on one side of the sponge when cool, spread the other with raspberry jam and put together. Sieve icing sugar on top. delicious!

I say it looked great as I made the mistake of nipping out to Tesco and when I got back Trish and my sisters had scoffed the lot, all I got was a few crumbs and the comment from my sisters that could I make two next time so they could take some for their husbands.
