I bought some today as I am having friends around at weekend for champagne and nibbles. Now I don't know what to do with it. I was thinking of just cubing it and giving it a light dusting of smoked paprika, would that work or does anyone else have any better ideas as to what to do with it, I don't want to be cooking things whilst my guests are here, also as we will all have eaten at lunchtime, it doesn't have to be anything too substantial, just easy nibbles :)

Serve it on a large platter with other classic Spanish products like a Jamón Serrano (the unspeakably delicious Jamón Iberico de Bellota if you’re a millionaire), with green olives and with dulce de membrillo – the sweetness of the quinces is a gorgeous counterpoint to the sharpness of the cheese. Crusty bread ties the whole platter together.

You can just cube it as you suggest and serve with wee bits of membrillo. It also works well drizzled with honey or even better with a wee side of clear honey with pine nuts (should be a chunky mix that you can spoon on). Alternatively I had it as a tapa once in Haro where they had dipped traingular slices of it in egg then coated it in polenta before giving it a quick fry to crisp the polenta. Delicious
